Born in Kiev, Ukraine, buckwheat, or "gretchka" in Russian, was always a staple food in our pantry. When times were hard, people always relied on this nutritious ingredient to feed their families. Even after immigrating to New York when I was 6 years old, our dinner table was rarely without a big bowl of mom's delicious steaming buckwheat. Little did I know, not only was buckwheat's taste amazing, but it was also amazing for me! Way to go, mom!
After graduation from the University of Michigan in 2005, I pursued a career in logistics, but I ultimately discovered that I could not tame my inner drive for all things culinary, so eight years later, I was off to culinary school. After graduating from the International Culinary Center in 2014, I decided to combine my passions for cooking and health and create a product ouf of my favorite childhood staple. Since I always found myself craving a healthy snack with ingredients I could pronounce and no added sugar, I spent some time experimenting in my small NYC kitchen, and I finally figured out the perfect "Nosh".
Despite its name, buckwheat is actually gluten free! There is absolutely nothing wheat about this seed, so we took the "e" out of buckwheat... BuckWHAT!?
It's a superfood, with super qualities; low in calories, high in protein and fiber, and amazing on the glycemic scale. Buckwheat gives your body what it needs and will keep you feeling full. As a mom myself now, there is nothing that makes me happier than seeing my baby noshing on my buckwheat noshes. It truly is a great snack for the entire family!
